Common Thyme or thymus Vulgaris is a small perennial herb with aromatic, dark grey-green leaves and white or pink flowers in early summer. It is the variety most frequently used for cooking and is easy to grow. Thyme can be used fresh or it can be dried. It can be used to flavour stews, stuffings and soups. It is also delicious added to poultry and fish dishes. It goes well with other herbs such as rosemary and parsley. It is an essential herb in mixes such as herbes de Provence and bouquet garni.
